Chicken Pasole

This is a really quick, 2-step chicken dish that goes great with rice,
and can keep for a couple days to make a reheatable lunch or dinner.

Ingredients:
Rotisserie chicken (pre-shredded, or get a whole chicken and tear up
the breast meat)
15oz Chick Peas
Olive oil
1/2 Sliced onion
32oz chicken broth
28oz can diced tomatoes
Salt, Pepper
Your favorite type of chillie pepper
Lime

A. Heat some olive oil in a deep pan, saute the onions till they start
turning golden. Add a dash of salt and pepper.

B. Pour in broth, add tomatoes, chillie, chick peas, chicken. Heat
until simmering for about 5 mins. Serve over rice with a lime.

Might be the simplist recipe ever for hearty, good food.
